Beef

8573032_orig.jpg

Our delicious beef is 100% grassfed.  Our small herd is a mix of Herefords, American Milking Devons and Angus.

How it Works

  1. Place an order here. That order will be ready between late November and December.
  2. After you place your order, we will confirm your order via email and ask for a non-refundable deposit.
  3. Full payment is due upon delivery/on-farm pick up.

Custom Cut Items

Our custom cut items include a whole cow, a side, and a quarter.  The basic idea is you are ordering a portion of the animal, and you get to choose (we can help too!) how we cut it up. If you're excited to learn more about how to tell us how you'd like your beef cut, try downloading our Beef Cut Sheet and fill it out! Otherwise, our standard cutting will likely include the following cuts:

  • steaks  (filet mignon, rib-eye, sirloin, porterhouse, T-bone, top round, flank, flat iron, skirt, spider)
  • roasts (brisket, chuck, mock tender, sirloin, round, teres major, tri-tip)
  • stew beef (kebab beef)
  • short ribs
  • meaty soup bones (shank and neck)
  • ground beef

“Hanging Weight” is measured bone-in and is 30-40% more than what you will put in your freezer depending on how much bone is left in the cuts.

We suggest that folks get together and buy a side or a quarter or even a whole beef!  This will provide you with the highest diversity of cuts that you can then split to satisfy your personal preferences.

Fixed Weight Items

If choosing your cuts is daunting, we have two fixed weight options that can be purchased separately or in addition to your custom cut items.

  • A 20-pound variety pack of farmer-selected cuts that would fit in a regular household freezer. Pack includes approximately 11 lbs of cuts and 9 lbs of ground beef. $250/each 20-pound pack
  • 10 pounds minimum order of hamburger in 1 pound packages. $6.80/lb

Payment

Fill out the order form, when we receive your online order, we will send an order confirmation email with an invoice for the non-refundable deposit. The remainder of your payment will be due at pick-up/delivery when exact weights are known. Orders are final once deposits are received.

Pork

Custom Cut Items

Our custom cut items include a whole pig, a side, and a quarter.  The basic idea is you are ordering a portion of the animal, and you get to choose (we can help too!) how we cut it up. If you'd like to try using our Pork Cut Sheet, you can choose from all our cutting options! If you're not sure, or like how we do things, our standard cutting will likely include the following cuts:

  • pork chops
  • pork tenderloin
  • ribs
  • sausage/ground pork
  • ham steaks
  • ham hocks
  • smoked bacon
  • shoulder or Boston Butt roast

Custom cut portions include ground pork or sausage (your choice of Ginger Sage, Spicy Italian, Sweet Italian, Maple Breakfast, Bourbon Fennel, Mexican Chorizo). A whole hog cut the way we usually do it yields approximately 40 pounds of sausage or ground pork. (20 lbs for a side, and 10 lbs for a 1/4)

NEW in 2018! cured pork chops

After some experimenting in 2017 we've decided to add a cured pork chop to the roster. Here's how we do it: we take the loin (where the pork chops come from) and we cure it in a brine made with water, maple syrup, brown sugar, sage, garlic, black pepper, bay leaf and thyme. We can either leave it whole as a roast, or cut them into pork chops. We love these pork chops for their flavor and added moisture. You can purchase the chops by the pound (5 lb minimum) or we can cure the loin from your custom cut pig!

Prices for value added pork processing

  • Bacon Curing: $1.50/lb
  • Pork Chop Curing: $1.00

To cover the added cost of ingredients and labor the following fees apply to bacon and cured pork chops. The fee is based on the "green" weight of the cut, which is to say the weight of the cut before it has been cured. For example, when we go to make bacon we take a 10 lb side of bacon and cure it in our bacon rub. Then we smoke it, slice it and package it. We charge $1.50/lb for bacon, and so the bacon fee would be $15. Because curing and smoking remove water weight the total weight of your finished bacon may only be 7-8 lbs.

Pastured Chicken

chickens.jpg

Organically fed and pasture raised, these chickens are tasty! Available now in the Farm Store or by order.

How it Works

Easy! Chickens are available in our farm store all year round.  If you don't want to order ahead of time, no problem, just come get them whenever you'd like.  The Farm Store is open 365 days of the year, 7 days a week 8am to 9pm. If you live farther away or don't want to take the chance that we sell out, you can order ahead of time by using our online order form here.

  • When you order, you send us a non-refundable deposit towards the total cost of your order. (We will accept orders until we’re sold out).
  • Your Freedom Rangers grow up in our pastures eating grass and an organic or local grain ration;
  • We harvest the birds, weigh, bag and freeze them here on the farm;
  • You pick up a year’s supply of chicken on the farm starting mid-June or we deliver to select locations (TBD) before Thanksgiving.

These chickens have the life!  On pasture as soon as they're sturdy enough (2-3 weeks), we place their coops (Joel Salatin Chicken Tractor Style) in electronet and leave them propped open 24 hours a day, so they can forage whenever they like.  A custom mixed organic or local feed ration supplements their foraging.

The average household of four will eat 15 to 20 chickens a year.

Chicken Products

New in 2018: Chicken Sausage!

  • We're trying out new flavors all the time, but for this year we will offer two flavors of chicken sausage:
    • Tomato Basil: made with our own tomatoes, our own basil, garlic, black pepper and red wine vinegar
    • Spinach Feta: made with our own spinach, feta cheese from North Country Creamery in Keeseville, NY, black pepper, oregano, and vinegar.
  • We don't always recommend casing sausage, but we've found with a chicken sausage we love it cased! Cased sausage costs $0.50/lb more but we think its worth it:)

We aim for 4lb birds and they sell for $5.75/lb.
